Old Hamlet's original recipes from the mid-1990s, these champagne cocktail spices add a warm spiciness to a chilled champagne glass.

4 x spice pouches in a muslin bag

INGREDIENTS
Ginger, Allspice, Lemon Peel, Mace.

Directions:
Pour 150ml (¼ pint) of brandy into a pan, then add 1 Champagne Cocktail spice bundle, not your costliest bottle of bubbly.  Heat gently for 5 minutes, but do not boil.  Let the brandy cool for at least 15 minutes, then remove the spice bundle.  Place a sugar lump in each champagne glass, plus 1 – 2 drops of Angostura bitters.  Add a dash (1 dessertspoon) of spiced brandy, and pour over the chilled champagne, or sparkling wine.
